'Matcha' Points For Mum This Mother's Day

Keen to really spoil mum this Mother's Day? We couldn't think of a better way of doing this than by spreading the love through food.

Lucky for you, our in-house nutritional therapist and health coach, Luana Marchi has shared some of her ultimate health treats with us so we can all stock up on some brownie points (excuse the pun) this weekend.

RAW MATCHA SLICE

What you'll need for the base:

  • 1 1/4 cup oats
  • 1/2 cup vegan vanilla protein or almond meal
  • 2 tbsp matcha powder
  • 1/3 cup rice syrup
  • 1 cup raw cashews soaked overnight
  • 1/2 tsp vanilla essence
  • 1 tbsp coconut oil

How to make it:

  1. Blend all ingredients together in a food processor
  2. Press the mixture into a base of a loaf pan lined with baking paper
  3. Place in freezer to set while making the chocolate coating

What you'll need for the chocolate coating:

  • 1/2 cup 70% chocolate chopped or dark chocolate chips
  • 1 tbsp coconut oil
  • 1 tbsp almond butter
  • Flaky sea salt, for topping

How to make it:

  1. Melt the chocolate and coconut oil in the microwave or in a pan on low heat
  2. Mix the almond butter
  3. Pour it on top of the base
  4. Place in the freezer for 30 minutes to 1 hour
  5. Cut it into squares and enjoy!

OVERNIGHT OATS

What you'll need:

  • 1/2 cup rolled oats
  • 1 tbsp chia seeds
  • 3/4 cup almond milk (or milk of your choice)
  • 2 tbsp honey or maple syrup
  • 1/2 banana mashed
  • 4 strawberries chopped

How to make it:

  1. Place the oats, chia seeds, mashed banana, honey and milk in a jar and mix until well combined
  2. Pour the strawberries on top
  3. Refrigerate overnight (6-8 hours)
  4. Top with your choice of coconut flakes, cacao nibs, seeds, crushed nuts and/or dried fruits

TAHINI AND CHOCOLATE FUDGE BARS

What you'll need:

  • 2 cups of hulled tahini
  • 1/2 cup of cacao powder (or 1/4 cup of cacao powder + 1/4 cup of carob powder)
  • 1 cup rice syrup or honey 
  • 3 tbsp rosewater (optional)
  • 4 tbsp of melted coconut oil 
  • 1 tsp vanilla extract 
  • 1 tbsp of maca powder
  • 1/2 cup of dried figs chopped*

How to make it:

  1. Place all the ingredients (except the figs) in a bowl and combine until smooth
  2. Pour the mixture into a lined loaf tin
  3. Place the dried figs on top and place in the freezer for 2 hours to set

*you can replace the figs for any other dried fruit of your choice, or perhaps add some nuts or coconut flakes for some extra crunch. 

VEGAN PERSIMMON AND CHOCOLATE TART

What you'll need for the crust:

  • 1 cup of pistachios 
  • 1/2 cup of shredded coconut 
  • 4 dates
  • 1 tbsp of coconut oil

How to make it:

  1. Place the pistachios, coconut, dates and coconut oil in a food processor and process until it forms a dough
  2. Take approximately 2-3 tbsp and press into a small tart pan
  3. Freeze for at least 15 minutes

What you'll need for the chocolate ganache:

  • One block of 90% chocolate
  • 1 cup of coconut yoghurt 

How to make it:

  1. Heat the chocolate in a pan over low heat
  2. Pour over the coconut yoghurt and stir until smooth

How to put it all together:

  1. Un-mold a tart shell and place a tablespoon of chocolate ganache in the base
  2. Add one slice of persimmon on top
  3. Top it with extra chocolate ganache
  4. Allow to set in the fridge for 1 hour before serving
  5. Decorate it with persimmon slices and a dash of cinnamon. Yum!
