Zucchini Fritters by Luana Marchi

The Perfect option for 'Meatless Monday'. A delicious and nutitious breakfast, snack or side dish.
4 cups of grated zucchini
1/4 cup of almond meal
Handful grated vegan cheese (or normal cheese of choice)
2 eggs (or 4tbsp flaxseed meal + 1/4 cup of warm water or almond milk)
1/2 onion chopped into small pieces
Salt and herbs to taste
How to make it:
Squeeze the grated zucchini with a paper towel to remove the excess water.
In a large mixing bowl add zucchini, almond meal and cheese.
In a separate bowl, combine the eggs, onion, salt and herb mix and beat until the egg is slightly frothy.
Pour over the zucchini to combine.
Heat 1 tsp of coconut oil or ghee butter in a fry pan over medium heat.
Using a tbsp drop the batter (about 2 tbsp of batter per fritter).
Fry them for approx. 2-3 mins per side.
Transfer the cooked fritters to a plate lined with paper towels and repeat with the remaining batter.
